Ingredients:
2 cups cooked brown or green lentils (rinsed and well drained)
2 cups unsalted nuts or seeds (walnuts, pecans, sunflower seeds, or pumpkin seeds work well)
16 ounces of diced mushrooms
1 medium sweet potato, peeled and chopped into ½ inch cubes
1/2 cup bread crumbs
1 small red onion or Spanish onion, diced
1 celery rib, diced
1/2 of a green bell pepper, diced
4 garlic cloves, peeled and minced
4 Tbsp tomato paste
4 Tbsp soy sauce, coconut aminos, or vegan Worcestershire sauce
2 Tbsp Creole seasoning
2 Tbsp neutral oil
1 Tbsp thyme
1 Tbsp Italian seasoning
Sea salt and black pepper to taste
Topping Options (1/2 - 1 cup):

Directions:
1. Preheat the Oven: Heat the oven to 350°F (175°C) and line a standard loaf pan (or 8×8-inch baking pan) with parchment paper. Set aside.
2. Sauté the Vegetables: Heat a large skillet over medium heat. Once hot, add the oil, onion, celery, bell pepper, and sweet potato. Cook for 3-5 minutes, then season with 1 Tbsp each of Creole seasoning and soy sauce. Sauté, stirring frequently, for an additional 5-8 minutes. Add the mushrooms and garlic, and cook for another 5 minutes. Stir in the lentils, tomato paste, and remaining soy sauce. Set aside and allow to cool slightly.
3. Blend the Nuts: To a blender or food processor, add nuts and pulse a few times into a loose meal. Then add half of the sweet potato, mushroom, and lentil mixture, and pulse to loosely combine but be careful not to purée. Add the blended mixture back to the skillet with the remaining sweet potato, mushroom, and lentil mixture. Stir to combine well. Add the Italian seasoning, Creole seasoning, and bread crumbs. Stir to mix thoroughly and combine all the ingredients. If your skillet is not large enough, use a mixing bowl.
4. Adjust Flavor & Consistency: Taste and adjust for flavor and consistency. If the mixture is crumbly (which may happen depending on the texture of your lentils), scoop half of the mixture back into the food processor and pulse until it’s more finely puréed. Then return it to the skillet or bowl and stir with the remaining mixture. If it’s too wet, add more bread crumbs as needed. Taste and adjust flavor as needed, adding more tomato paste, soy sauce, salt, or herbs.
5. Transfer to Loaf Pan: Transfer the mixture to the parchment-lined loaf pan, spread, and press into an even layer. Add your topping of choice and spread into an even layer. If not using a topping, brush the top with a little oil to help the loaf retain moisture.
6. Bake the Loaf: Bake uncovered for 45 minutes or until golden brown on the edges and slightly dry to the touch. Remove from the oven and let rest for 10-15 minutes in the pan. Then gently remove and carefully slice and serve.
